Juice Pulp Crackers

So I know you just couldn't wait for this weeks topic.

I promised last week that I would write about what to do with all the pulp that is leftover after juicing. I used to very reluctantly throw it away. I would sometimes freeze it or keep it in the fridge for the occasion where I could throw them in muffins or some other baked good. But usually they just hung out in the freezer until I threw them out. It just didnt feel right to keep throwing it out.

I had thought that pulp crackers could only be made with a dehydrator, I didnt really look into it all, I just assumed. So when I found out that you can make pulp crackers in a regular oven, I think I smiled for a week.

So heres the deal:

  • 2-2/3 cup pulp from juice

  • 1/2 cup flax meal

  • 1 cup water

  • Add any spices

Now get your hands dirty and mix it all together or go the safe way and let your food processor do the work.

Put it on a cookie tray, flatten it down and bake in the oven @ 350 for about 45min.

These have been my bread substitute for the past while. They are actually really good! And major bonus I dont feel glutenous after eating them. But the topper is that I feel a million times better just by not throwing them out.

Grandma would be proud!
