Quinoa Lettuce Wraps
My original thought yesterday was "hm... how can I make healthy burritos?" I looked up a few recipes but lost patience for what I was finding. (Within one Google search and clicks on three various recipes - so about 10 seconds really)
But then I started thinking lettuce wraps and suddenly this recipe came to mind. Its one of those recipes that you make over and over for months because it never lets you down and suddenly you forget all about it.
I'm sorry for the two years that have passed where I didn't touch this recipe, I kinda feel like it was lost time, ya know?
Alas, I still have a whole life ahead of me and I think this salad will share all the good times and bad times that lie ahead. Its like we are old high school friends that have re-connected again. Its a beautiful story really.
So ya, you want the recipe?
Side note - if you are a real burrito lover and not so into healthy foods, don't think 'burrito' while you eat this, I feel like there are better alternatives which I hope to one day explore. Think...um...Moroccan Wrap Part-AY!

MOROCCAN QUINOA LETTUCE WRAPS
(Not going to pretend I made this up, from http://www.wish.ca/food/recipe/156/)
Step 1 - The Dressing
1/3 c freshly squeezed lemon
3 tbs olive oil
2 tsp ground cumin
1 tsp salt
1/4 tsp runny honey ;)
Mix together!
Step 2 - The Salad
3 cups cooked quinoa
1-2 cups canned blk beans
1-1/2 cups corn kernels (which we omitted, but makes the salad really look like a party)
1/2 red onion
1 pint cherry toms
1/2 c slivered almonds toasted (worth putting the effort into toasting them, you will see why)
1/4 c chopped green or black olives
1/4 c chopped mint
1/4 c chopped cilantro
Mix together!
Step 3 - Dressing meets Salad

Step 4 - The Moment We Have All Been Waiting For
We used green leaf lettuce, but iceberg is a common go to for lettuce wraps. Put one leaf one your plate, add some salad (add optional avocados) roll it up and put it in your mouth!
My friends and I sat around a table and ate these with good laughs, bad wine and random conversations (thanks Jules for the great eve!) But you can eat this however you want. That's the great thing about lettuce wraps, you can take them anywhere.
