Grain Free Granola
Hey hey, People!
I know, I know. I haven't been on top of these blogs lately. I was so consistent for like 2 years, blogging about this 'n that once a week. Which was fun at the time. But truth be told, my mind has been on other things. Like the fact that I'm (we are) going to have a BABY in three months. Omg. That is scary. And quite mind consuming.
So on that note, these blogs are going from weekly to whenever the hell I feel like blogging blogs! Yay! And judging by the amount of free time my new mamma friends have, it definitely wont be weekly.
But today I couldn't WAIT to blog about this delicious recipe that is blowing my mind.
Let's talk granola for a moment. I could talk granola for hours but for the sake of your attention span and my time frame I'll keep it short. There has definitely been many a times that I have been let down by granola. Whether it was purchased from a store or a recipe I followed.
First, it can be totally misleading. You think granola is good for you, right? So you buy granola thinking your doing good things but then you read the ingredients and BAM - full of oils, sugars, processed this and that. What a let down! The grandmothers of granola would be so ashamed of what has become of them.
Then whenever I have made my own it has tasted totally boring and... ya boring.
So the other day I was looking up Paleo recipes just for the heck of it. And I found one that looked intriguing. I had all the ingredients in my kitchen (love when that happens) so I gave it a chance and went to work.
OMG. Like I said this shit will blow your mind. My friends taste tested this and their reactions filled me from head to toe. They loved it.
AND did I mention there are no grains in this? None. Nadda. Truthfully I don't know if this whole no-grains thing is just a fad but I do know that I did not feel one bit lethargic after eating this granola which grains can sometimes do. I felt like a superhero. With a cape.
Grain Free Granola
1 cup each of the following:
1/4 sunflower seeds
3 tbsp flax seeds
1 tbsp cinnamon
3 tbsp coconut oil, melted
1 cup honey, melted
2 tbsp vanilla
3/4 tsp seasalt
1/2 cup shredded coconut (unsweetened)
Optional 1/2 cup raisins
First, soak the nuts and sun seeds overnight.
Get out your food processor (if you don't have one you should probably get one, they are essential.) and blend the nuts until they look something like oats. Leave out half the sunflower seeds.
Add coconut oil, cinnamon, honey, vanilla and sea salt. Pulse until it is all combined.
Add the flax seeds and rest of the sun seeds and pulse just a couple of times until they are combined in the mixture.
