Easy Rhubarb Recipe


It's funny how rhubarb seems to have just fallen under the category of cabbage, kohlrabi and turnips where only moms and grandmas who grow them in their backyard are cooking with them.

Well heck I say its time to bring rhubarb back!

One of my favourite recollections of rhubarb growing up is my mom's rhubarb pie. It is the best. Ya ya I know, everyone's mom makes 'the best' rhubarb pie. But seriously guys, my mom's is where its at.

Having said that, I don't have the recipe for you. I just got super stoked (and a teeny touch homesick) when my neighbour gave me some extra rhubarb.

After years of eating rhubarb pie, I realized I have never cooked rhubarb myself. So I found an easy recipe. "Easy Stewed Rhubarb".

Stewed, who even does that anymore? It's cooking as I write this and oh my god. It smells sooooo good. Mamma!

Easy Stewed Rhubarb

When you write rhubarb over and over, the word just looks weird... rhubarb?

  • 6 cups rhubarb

  • 2 tbsp water

  • 2 tbsp honey or sweetener (more if you like less tart)

Chop up the rhubarb, put it in a saucepan with water and simmer on med heat. Mix 'er around, turn the heat on low and simmer/stir for about 10min. So easy it only took two sentences to explain. You can add some granola and maybe some yoghurt too so it looks pretty like the first pic.

Go on create it, make granny proud.
